Thanks for this, the Three Crab really does smell a bit strong. That blis is interesting, there does seem to be a spin toward the foodie crowd.
I will have to show this to Hanh, she loves when things from Vietnam get good ratings.. She might be surprised by the results though. Heck before I met her, Squid brand was what sat in my cupboard. I am guessing that's about to change.
Off to the markets he did go.
First one had 14 'regular' fish sauces, but no Red Boat. Next had 24, again no Red Boat. Lots of high priced ones and of course lots of the Squid brand and similar. Everything from $1.99 to $13.99 for a 750ml bottle and even some specialty ones that come at a higher price/ml.
I need further investigation as I was a bit aloof about fish sauces. I'm the kind of guy who wants the job done, and I don't stand around talking stuff unless it's needed. I am a food hobbyest, with a flare for making sure you're happy with what hits your mouth.

Oh, and thank's for that fish sauce link! Going shopping at one of the usual Asian markets this weekend (where we buy ~60% of our groceries) and will pick some Red boat if they have it, if not some Tiparos 🙂

Several top chefs here have been recommending Red Boat for years, same same for food book writers.
Nearest supplier is in the UK at a premium, in the US it can be bought at Walmart. Likely takes another dozen years to be marketed on the Euro continent.
It's at peak fermentation now, Good and stinky. Ready in 7 days methinks.The sauerkraut looks tasty.

Cured and smoked lamb flank. I find it cooks better fried in olive oil.

The pate is excellent but there will be no pictures. No matter how well plated, or what garnish, I can't make it look like anything other than meat pudding. Taste wise, I hit the nail on the head and made it way more fat free than it's supposed to be.
I gots me a winner this time.

You just freeze it, then it is meat ice cream! Even better use a heart shaped mold.

Black pudding is really nice but it is made from blood rather than meat.

Well, as long as you get an optimum level of 2 ounces of alcohol a day you should be fine. Maximum should be 4 ounces. Really, according to a gerontologist friend!
