Another vegetable that really benefits from roasting is cauliflower. My wife loves the stuff, but steamed it is utterly bland and lacking in flavour. So I toss it in a little olive oil and roast, either in the oven or on the Broil King (in a stainless mesh pan). Roasting reduces moisture content and concentrates flavour, so the cauliflower actually tastes like something.

Our cafeteria had a huge pan of both oven roasted every day, pay by the oz. The new management has discontinued that.:mad:
 
Late night dinner thursday, pork chop and salad for me, fried eggs shared with my wife :D
