Charing certain proteins really affects flavor. Cheese, meat, long beans all pick up a different flavor when lightly blackened. Once I added the fresh grated parm on top of the chicken, dash of fresh parsley it really created a much more intense flavor. Even though I don't have 100% of my sense of smell back yet, it is noticeable.
Baking a couple sriracha loaves today, I can actually smell it baking now! I couldn't imagine going a year or more without it. I would end up depressed with my food.
For lunch, I think I'm going to toast up some plain sourdough and top with kipper, herbs, and yuzu hot sauce.

Beef short ribs tonight. I forgot the carrots in the braising sauce, but didn't notice any ill effects.
A somewhat lighter side dish tonight, with crispy jasmine rice, peas, carrots, broccoli and onions.
I'm pretty sure I like the sauce better than my usual, all fresh tomatoes, onions, garlic, celery and basil, with a few dried bay leaves and some balsamic vinegar instead of wine.
For some reason it was fork cutting, falling off the bones tender after only 2 hours at 325°F, so onto the plate.
The beef fat rendered from browning them did a great job seasoning a couple cast iron pans while braising these in the oven, as a bonus.

Nice.... I made some braised oxtails last weekend. Didn't take pictures.
300F in the oven ( big stock pot ) for two hours.
Didn't used carrots either.... just onion, garlic, celery, salt, pepper, a nice red wine, chicken bouillon!, oregano, thyme and ground noras ( a Catalan sweet pepper ).
Yes, ketchup is called tomato sauce here. But chips are not french fries, they're much bigger. I like vinegar on them too, but learned to love mayo on chips (and french fries, which are actually Belgian) in Brussels.
I dunno, during my two week visit to Oz, I could not get sufficient ketchup to do my french fries... and NO tabasco -or any hot sauce.
Then, they insisted on putting black mushrooms on top of the steaks. I thought they were gonna have a heart attack when I asked for NO mushrooms.
It was Brisbane, Canberra and Sydney....
But. McDonald's was around... and one night when we got off the plane late, the only open restaurant in town was a McDonald's. They hot plenty of ketchup.

I just bought some of these today...
We all have to be careful with money these days. This week I raided my local Sainsbury's supermarket yellow sticker section at 7PM, as we like to do from the Wetherspoons Pub over the road when we see the manager doing the bargain stickers:
They were a bargain indeed at 50p! I bought two.
Actually, Wetherspoons do a £4.01 breakfast muffin and coffee (refills free) too:
This one is cholesterol murder at 400 calories. And the runny egg explodes all over you when you bite into it.
Anyway, I thought I could imitate the yummy Sainsbury's muffin easily enough, though I haven't figured out where Semolina fits into it:
Muffin 30p.
Smoky Tomato and Chilli Chutney 10p
Spinich leaves 2p
Cheddar Cheese 10p
1/2 Egg plus Mayonaisse 15p
40 seconds in the microwave and make my own coffee 5p
Total 72p.
Voila:

Speaking of saving money on food, here is what the Finlanders up around Ely Mn call an electronic hook.
Salads are great. You can put lots of stuff on them... green beans, eggs, good tuna, anchovies, olives, hard boiled eggs, garbanzos, white beans, roasted pimentos, onions, celery, all kinds of greens... with a bit of good roasted bread and a nice red wine.
We make a salad a dinner at least once a week. Even more in our summer.
The Thai make it an art too... beef, noodles, awesome. We had some two weekends ago on a restaurant outing. With a side dish of deep fried pompano.... Yum!

Still feeling those ribs, so the braising sauce I saved for more became what I thought would be a light soup turned out quite hearty.
I kind of had an idea I might do this, so instead of basil and oregano the sauce had tarragon in it.
Thinned out and with lentils, mushrooms and some cilantro, it's rich. Perfect with some thick cut toasted sourdough garlic bread. Even with only a few hours altogether with the bones swimming in first sauce then soup, it tastes like there's a bit of marrow in it.
I should have redone the braising liquid like this long ago.

Mark, Okra is available almost all year round here. we do tempura often. These are something so different. A 60 gram bag is more than two need as a snack. It gives you probably 50 pieces. I’m on the iPad or I would give you a link.
I love "salads." I put it in quotes because of dishes called a "salad" that really shouldn't be. Macaroni salad. Potato salad. Fruit salad. Sure, we accept them into the club, but are they really? Lol.
Unrelated, stopped by a Salvation Army store today with my sweetie on our Saturday morning date/outing, and I always look through the electronics and kitchen wares. Found a Denon DP29F in rough shape, left it there. Amongst the Asian made cast iron was a solitary grey pan with heavy rivets. Dug it out and it was a Calphalon Unison aluminum 12" pan for $5! Score! I'm slowly getting rid of all our leftover smaller pans from before we got together (6 years next month) and this will take over for two 8" pans easily. 20 minutes with some Bar Keepers Friend and a scotchbrite got it nice and clean! The missus found a purse that had a $5 bill stashed inside, too, so basically the pan was free!
