do you think that the copper bar is some kind of thermal resistor?

In your case if you want to use 6 mosfets (with a board) on 3 sinks per side you need some sort of a plate to spread the heat. There was another thread dealing with this issue when you mount devices directly to a spreader copper plate without insulator. The copper board increase the heat transfer from the device and then using insulator its attached to a sink making the actual heat transfer form FET to the sink better. But in your case 3 of the FETs are on positive rail and the other 3 on negative so it's not possible to mount them without insulator on the same plate.
Anyway your sinks are big eniugh so the plate's heat resistance is not a problem
