The food thread

In the past it was popular dish of the poor people, very popular in Croatia too.
I like the term 'peasant food'. Some of my favourite dishes fall into that category.
Some of the best food I’ve ever had was plain ol comfort dishes.....must be the excess of butter!
That's an interesting take, as through the ages and in many cultures butter is extravagant. To be brought out only when guests were expected. Other fats yes, as fat was an important part of the diet. Now it's so available we even store it on our bodies. 😉
 
I wonder if Brussel Sprouts are the most contentious issue in the Known Universe? 😀

Kids won't eat them. Adults force them down in the Knowledge of better things to come.

Frankly, in Midwinter or December, what else you gonna eat that is Healthy or Green? 😕
 
My dislike may stem from when I lived, decades ago, on the San Mateo coast where they grow hundreds of acres of "sprouts" every year. The stench from the stalks left to rot in the fields after harvest was stomach turning and lasted for a month or more. Well, that and the fact that what I was forced to eat as a kid was horrible.
 
The art of preparing Brysselkål as they are called over here (Swedzzerland - think cuckoo clocks and Volvos) is to treat them like an chunk of that Wagyu Kobe Steak. It's about not over- or undercooking as one way will make the sprouts to taste bitter and the other just produce ammunition for your musket.
I have tried to cook them just a little, then cut them i halves and finish them in a frying pan with amounts of butter.
