The food thread

Speaking of boating, did you hear the one about the fat old cooking guy who bought a boat? What a mistake. He needs to have two of his friends with him, both on the other side just for ballast.

Last Thursday I got to get her feet wet. Too busy dodging logs in the Pitt river to take many pics but these two are kinda nice. For different reasons of course.
Can't wait to do our first beach bbq.

Wondering if anyone has seen these before. It's Oyster mushrooms made into snack 'chips'. Not ground as flavour, it's crispy little pieces of seasoned mushroom.
They just passed their BB date and were for sale extra cheap. Tried one of them and then one of the Mango while we were still in the parking lot. First bite and I was out of the car and headed back to the store to buy out the remaining stock. Not sure what they cost to begin with but at 50 cent a bag ($0.35 USD), there was no stopping me.

No..... pretty much normal. We eat small portions. I practice intermittent fasting myself.

When you limit how much you eat, you can afford to eat at the highest quality.

For example. steaks... my wife and I will share a 12 oz ribeye. Often times, 16 ounces are enough for the three of us. So, we only buy aged and/or prime beef grades.

We are also Masters of Repurposing Left Overs...

Not right now, but a return to baking might just push me over the BMI edge... watch this space for updates 🤣

Cal & Tony, got it, thinly sliced and piled on a buttered/toasted baguette. Condiments and choice of cheese are to be determined.

Mushroom chips? My first thought was freeze dried but a bit of quick research showed that at least some of the offerings out there are "vacuum fried". I have heard of pressure cooker fryers but that's new to me. I can try to freeze dry a batch the next time I happen across a flush of em.

Not heard of it but my two minutes of research says this is bang on, you have it nailed. Good to know.
Another, more accurate calculation tells me I need 15 kg of mushroom to make 1 kg of mushroom chips.

Pressure cooking fryers are how the world knows about commercial fried chicken.

Funny thing is that originally intermittent fasting was defined as a couple of days of very restricted calories in between eating normally. That is intermittent. Then the extended overnight fast got merged into it and if you eat in the same time period each day there is nothing intermittent about it. It means everyone who sleeps at night is practising intermittent fasting by this definition, which is very confusing to those of us who take words literally.

I don't routinely tell the World... but I was asked if I was fat... and I'm not because of my eating habits. Being doing this now for 10 years. I've gone for a 44 waist to a 34 in those years!

That's why they call it breakfast as in breaking the "fast"...

And you are right. We do "fast" over night when we sleep.

After those Indian coworkers explained fasting to me, I read into it.

@Cal Weldon is correct, it is called autophagy.

The idea is for your body to start feeding off itself.... in a long fast, like several days, your system starts to rebuild itself... gets rid of toxins, etc.... on a shorter fast there is a minimum fasting time that must observed...

For a male, it takes about 16 to 18 hours before your system starts to release the ketones, etc... for a female it's 14 to 16 hours... As a male, if you can do "fast" for 20 hours a day, that means that you will be in "regeneration" mode for 4 hours a day.... over time, over years, the benefits build up.

Also, when you sit down to eat, you eat less because you're stomach is not full all the time. Weird, but it works for me.

So the idea is not to eat breakfast or lunch... I started doing this when I my A1C started to move up to 7.8 and my weight really kick in... I lost a ton of weight doing this and my A1C is now 5.6.

If you try to fast overnight, it's easy... just don't go to bed with a full stomach.

But, by the time noon comes around it becomes hard and I start feeling "hungry".... that's when a nice double shot of espresso comes in very, very handy... I have two double shots daily.. one at noon, another at 4PM... that keeps my hunger at bay and manageable.

I dare you to go to Costco at 2PM... with all of that tasty looking free food tasting... yikes...

So, nowadays, I eat whatever I want... but we eat good food. we routinely cook and use very little processed/prepared foods.

I have biannual check ups now.... and my blood work is perfect except for one little thing... I have ketones and proteins in my blood which is greatly due to the fasting part.

Trust me, I recommend it.

BTW- I developed a taste for good chocolates.... call it almost a craving. After dinner, I'll have some of that Godiva stuff.... just a little... seemingly my body can handle it now... Try it with a bit of good Bas Armagnac... ;-D

None of that grass fed beef...

OK... sarcasm OFF.... but truth is that grass fed beef exhibits two distinct qualities....

ONE: it is much leaner and "dryer" to the taste buds and
TWO: It has an inconsistent flavor since the grass really affects the flavor of the meat. As the herds move about, they eat different tasting grasses.

That said.... grass fed beef can be awesome too.... we had some fantastic rib eyes a little while ago... organic, grass fed, out on the range, prime... you could tell the ranchers were stoned hippies that played Grateful Dead songs to their herd.... Ommm...... but the beef was great.

Beef fed a consistent diet will taste consistent. And when you let it rot for a while, it becomes.... tender.

BTW: I'm not too keen on Wagyu beef. It has too much fat for my taste and it ends up tasting as "fried beef". Ideally you got to slice it quite thin and cook it on a gridle as if it were shabu shabu ( fry fry )... We used a sous vide on some Wagyu once before finishing it on the table top gridle... trying to see if we could get a better mouth feel.... forget it..

Oh, aging beef... beef will last for 18 months in a vacuum bag in the fridge. It will be edible but the texture becomes rather rubbery. I can't recommend more than six months. The vacuum bag, BTW, slows down the aging process a lot... daughter bought me some special vacuum/aging bags that I need to give a try one of these days...

At least on this side of the pond the current viewpoint is that the ketosis is a red herring and its gut microbiome health that is the main benefit. But humans are complex an non-homogenous, and our microbiomes even more so. ends up as the biggest YMMV out there.

I've never had an A1C check but all my other blood measurements are normal. Mind you I'm only in my 6th decade.

Works for you which is good. Not for everyone though. I just follow the mantra 'eat food, not too much, lots of veg'

I have started eating some 100% chocolate my eldest put me onto. Really nice, but the mouth feel is very strange. Wife says it tastes like dirt 😀
 
Hmm... I'm not proud... I just stated it matter of factly. And it's good that I lost all of that weight. I was getting sick... bad things were happening to me... It became literally "Do or Die"... So here I am... tormenting you. 🙂

100% chocolate is weird. Bitter. 70% is as high as we go chez nous.

We both are in our 60s. If you don't have issues with your blood sugar, then congratulations. I think it's genetics... just as I have low cholesterol I also ran into high blood sugar as I put on pounds... my blood test shows ketosis. Just a little above normal.

They don't do an A1C blood test in the UK? As far as I know, it's a standard part of the panel of blood tests in the US. My wife and daughter always have that test as well.

No free wine at my Costco... but they did have bourbon tasting once. You were limited to three half ounce sips.... I had all three... yum...

Yeah, lots of veggies are good. We break our meals in four parts: protein, carbs, veggies and salad. Then think about the colors and textures. It's become a natural way of approaching our food. OK.... there's the fifth part.... "Beer or wine?". Again, the genes.... Catalan genes, you see? 😉

The funny thing is that I lost all that weight but I still drink beer and wine and smoke cigars. Genes... 🍷🍷

Oh last night... we had left over Costco pizza... it was frozen and we reheated it in the Ninja air fryer... it works perfectly for that. Wife also made an awesome Cobb Salad. With a nice Casa De Kirkland Rioja.
