The food thread

I got cousins that look like Elena.

Once upon a time... at a festival in the Old Country... my wife turned to me and said:

"Wow... they all look like you!".. (*)

Duh! And the Pope is Catholic ( Well, this one is a Jesuit.. so who knows? ).

Now Elena's dress.... Just think how much nicer it looks when the ladies are carrying a basket they carry with bread, cheeses, charcuterie, apples and a bota de vino.

She can sashay her hips all she wants... but the way women carry a basket of food off their hips..... hmmm....

In Spain they have a saying:

"Con pan y vino se anda el camino".

True, but the cheeses and sausages help a lot...

(*) My family, friends and fellow citizens in Spain are so homogeneous! While in North America we might as well be the United Nations. You understand that.

Cajun Grilled chicken (blackened seasoning), red beans ‘n rice, okra and tomatoes (from the garden) …….gonna wanna slap ya mama its so good, I garontee!

I foolishly asked at my local supermarket if they had beef brisket. So last visit they had two in the meat case. Bought them both and into the smoker. Only a bit more than 30 pounds! So about 15 hours till they seemed to be done by internal temperature. A few hours rest and then a not so brief visit to the slicer. Probably the easiest thing I ever ran through it.

Pretty sure I have enough smoked meat for at least a while.

Rubbed with kosher salt overnight in the fridge, light rinse before smoking.
Some people call them collars or fish ‘wings’ . Ugly?……maybe, if you’ve never had them before! That part seems to have a really high fat content and takes well to smoking.

I circled what part of the fish it is on my avatar pic.

OK... we got back last week.... made some paella on Sunday.... this is my secret:

I made some good taco salad last night... used New Mexico chiles... no pictures.... but tonight I went full FUSION.

This is Chicken Tonkatsu a la American Honda.... meaning, it has Ohio style mashed potatoes and brown gravy... the other version would be the Tonkatsu a la Alabama Honda with country gravy... but I didn't feel like making grits.

That's home made coleslaw with Korean cabbage and veggies. I picked that tomato off the plant just before dinner.

The colors are a bit bland but the flavors were spot on.

Yum Y'all....
