I brined chicken breasts for dinner today. (sorry, no pix) I used three quarts of water, 9 Tbsp salt, 2 tsp garlic powder, 2 tsp onion powder, a bunch of English thyme and sage. Time was from 11Am to 4-m, so 5 hrs. I used Dan-Os regular on two, Chipotle on two, and garlic salt on two. My son grilled them and everyone agreed they were very succulent. Chipotle was the winner.
It was served with Tasso ham green beans, fried okra and Knor Chicken rice.
Desert was Kentucky Derby Pie. No one ate the pie. We were too full.

Some of them went into a salty/chili simmer for a couple minutes and became part of this protein plate.
Upper left, clockwise:
Bean curd wrap
Brisket
Prawn
Tofu
Both of the Soy dishes were prepared by the local Monk and sold to the public from the temple.

We had some escamarlans (cigalas) in Barcelona that were to kill for.... I wish we could find them in the US.

I'm making more Fricando tonight.... I might add some brandy tonite.... One of the beef, two for the chef!

Yes, the Monk is Vietnamese. I give offerings to my honey and she picks out what foods we are going to get to support the cause. We seem to get the same things each time. All dishes are meatless.
I rarely see whole shrimp where I usually shop. Do you cook them whole, or use the heads in stock for other meals?Couldn't resist these 5/9 prawns at Costco. I can't remember the last time I bought meat at Costco but sometimes temptation gets the better of you. Especially when it's the big boys and it's priced right.

Head on or H/O as they are called, are quite common with fresh shrimp. These were previously frozen though and that is less common.
Yes, I remove the heads and sometimes the whole shell depending on what I am doing with them. Yes the heads get used for stock. Unfortunately this time I was lazy about removing the uglies and was not happy with the result.
If they are smaller, you can deep fry them whole and eat the crispy shell.

Deep fry the heads too and eat them. If you are squeamish, pop the eyes out. If you are really squeamish, go eat a burger to begin with.
That brings back memories. We don't see suckling pigs here much anymore. Special order item.
Kermit wants to know what you've done with the false eyelashes. If you're squeamish, don't make head cheese.
