They have differential input, so you can just have signal ground as the second input and that'll give you the balanced benefits. My current dac is using trafos on the output but the dam doesn't seem to need it?

you can just use ground as second input, and this should work. While the dam does not need a trafo output, a trafo would balance the output impedances for true balanced operation, and apparently the hypex amps benefit from this. But, if it works for you without buffer and trafo, then it should be also no problem.

That is true and I agree with that. However as far as I can recall Soren states that with 28bit depth of soekris at -70db level stil first 16bit are played. You can find it somewhere in soekris related thread.

No, not always true, and as usual the devil is in the detail - a "properly done" digital volume control is better than an analogue pot. If it is properly dithered and 24-bit or greater (and I believe the Soekris is) then digital volume control is usually much better than an analog pot.

Beware of old information that is limited to 16-bit streams and without access to the internals of the conversion.

Maybe I should make my self more clear. I do prefer analog control of digital volume in soekris over pure analog one. Doing analog volume control is pointless for me when bitperfect digital is available, however as you mentioned it all depends on implementation. I have tried digital volumes control from soekris and es9018 (example that your brought) and from ak4490. They were always better than analog ones (even better than pots with shunt mod with VAR naked resistor), especially when balanced signal was used.
BTW I found the post I referred to:
