He's having some Bal AVC, but I'm not sure are they proper (two coils on same core) or he's using pair of SE AVCs (not proper); I believe latter is in case
What pot value should I be using? I have seen Zen mention 25k as the upper limit, I might be wrong.
And if not going into Slagle options which will cost a fortune with taxes and shipping, what would be a no-nonsense quality volume control for Iron Pre?

look for no-big-name ones, having string of smd resistors inside, I've seen actual pictures on advertising pages

personally - of classic resistance attenuators - I care only for those having "conductive plastic" traces, but there is a problem - these are Pro quality ..... and price; TKD, ALPS, Penny & Giles, Piher (old) etc.
anything else, for me - meeh .... not worth thinking
