If the person were floating in the air, like a bird on a power line, nothing would happen, no shock.
If the bird had one leg on phase 1 hot and the other leg on phase 2 hot, the bird would burn.
That's an important fact about GFI: if you connect yourself like a Load, power is delivered.
No ground involved.

Yes that would also be the case without the RCD. Touching both L and N is not a clever action, same counts for touching line voltages.
The RCD is also not meant to protect against stupidity 😉
Thankfully most birds are too small to touch two powerlines. I think Pterosaurs would have a hard time surviving this modern world.

Don't forget about capacitive coupling the human body to earth. If the person were floating in the air, like a bird on a power line, nothing would happen, no shock.
No, the PE/SG is not involved in the GFCI function. The GFCI only checks that the Hot (send) current is the same has the Neutral (return) current. If some of the current goes thru another circuit's Hot or Neutral or thru Planet Earth the unbalance trips the GFCI........Of course these devices only work OK when there actually IS a PE connection.................
