Not sure if it qualifies as a cover precisely as so many have done it but Jackie Evancho sings Your Love from "Once Upon A Time In The West" better than anyone else I have heard.
Also With You Or Without You.

"Atlantic City" - the late Levon Helm and the other now sadly departed great voices of The Band, on a song by Bruce, with a killer mandolin intro.
I went into the gym one morning and one of the 20 somethings had some head banging music cranked. After a while a song came and I told him that it was a remake of a 40 year old rock song. He, nor anyone else in the place had ever heard the original, so I found it on Youtube and played it. Everyone present agreed that the "new" one was better, and after watching the video I agree.

I've had to argue with myself on this one, Chris Isaak's wicked game Copied by Stone Sour. I still havent decided which I like better when both are so good in there own right. Ill just be done with it and call it a tie. https://www.youtube.com/watch?v=cncoJB_C-m0
Another one is Simon and Garfunkel Sound Of Silence copied by Disturbed https://www.youtube.com/watch?v=u9Dg-g7t2l4 great work
Last but not least, Shinedown did a smashing job with Skynyrd's Simple Man https://www.youtube.com/watch?v=rgFQ6WmxdMs But I have to tip my hat to Skynyrd on this one.
Well, I was shocked to (re-)discover that The Life Aquatic with Steve Zissou is a 2004 movie.
How time flies.
Anyway. The Bowie covers by Seu Jorge are not better than original. But so so so so deserve to be heard.

The Jimi Hendrix version of All Along the Watchtower puts Dylan's original to shame.
So does his live version of Like a Rolling Stone!

Hendrix does do one of the best "Watchtowers."
