"Satisfaction" the Otis Redding and the Devo version I like better than The Rolling Stones version.
Devo's cover of "Are you experienced"... Not better than the original but very funny!! Check out the video!!
I'm sure I posted this before (too lazy to look) but I can't get enough.

This cover is 10 times better than the original! Great find!
How about John Meyer's version of 'Bold As Love' ...

.......... Nope! Good as the cover is ....... I'm still going with Hendrix!

Can't resist this one. On the upcoming live album, see if you can pick me out doing background vocals.😀

This ain't exactly in the spirit of this thread, but a couple of years ago, I did a radio special called "With Malice Aforethought", consisting of covers that (intentionally or not) skewered the original. The playlist is here - KFJC 89.7 FM : Playlist for Goodwrench: 30 May 2008 @ 7:00pm . Listening to (and finding) these covers can be edifying and amusing.

Slayer doin' Iron Butterfly's InnaGoddaDaVida though I can't find a worthy link...
Also Grand Funk massacres Stones' GimmeShelter

Not necessarily better than the original, but I like it very much. Kittie's version of Pink Floyd's "Run Like Hell". Very heavy, lots of good screaming.
This is much better than the original
YouTube - Oops!... Idid it again
Thompsons version Certainly is easier to focus on the words -
An externally hosted image should be here but it was not working when we last tested it.

Tori Amos' cover of Eminem's '97 Bonnie and Clyde is so creepy and disturbing that I have to include it in any list of great covers.
Nick Cave's cover of Dylan's Death is not the End,
I'd have to give a vote to Tori Amos' version of Losing My Religion (originally R.E.M - not that anyone in the developed world could fail to know that already) - quite possibly the most melancholy song ever (re)composed (even more so than Colorblind by Counting Crows).
One of the most original covers, but probably not to most people's tastes. 🙄
Fun Boy Three - Our Lips Are Sealed 12" remix is way better than the GoGo's version

Not normally my chosen Genre, but... Disturbed does an interesting interpretation of "Shout", that has a much different feel from the Tears for Fears cover of this Isley Brothers hit.
For Loud, Angry Music, it's produced well enough to be a real high SPL head turner, especially while the listener makes the connection between this version and the candy-pants, swishy, Tears for Fears rendition.

The guys in Fun Boy Three actually wrote "Our Lips Are Sealed", so it's not surprising that they might do it better. A tinge ominous, without the cloying brattiness of the Go-Gos.
The The's tribute to Hank Williams Sr. "There's a Tear in My Beer". It's kinda creepy, almost suicidal sounding.
Flaming Lips and a more recent group's accoustic solo tribute to David Bowie's Life on Mars.

hey there a cool blast from the past 'The The' or Matt Johnson. Got all of CDs even his 'Soul Mining' record before I had a CD player. check out his web site for the vids yet? The Hank tribute one was from left field and doesn't get much replay compared to the earlier perhaps even more chilling 'Mind Bomb'.
Flaming Lips documentary on Hulu is still in my List. If they are good enough for Beck can't be all bad.

The 12" remix version is very dub like, highly recommended. the video is just a smattering.
err this song was co-wrote with one GoGo who then released their version first
