I have to mention, though, since I saw your user name, that Norah Jones did a Tom Waits song at the concert I took my wife to a few months ago. I must admit that I didn't recognize it, but it was super nice.

I always love it when people do covers that they truly make their own.

I think she is playing The Long Way Home . TW made a contribution to the Big Bad Love soundtrack with this track a few years ago. Jones recorded this on one of her records.

Personally I think it would be more interesting to hear her play 16 Shells From a Thirty-Ought Six.😉

The Kleptones have done some really nice hiphop versions of Queen and The Flaming Lips that I have on regular rotation. The sound quality isn't the best, but the music is great. Also, the infamous Grey Album is one of my all time favorites in that genera. Then again, I have liked most of what Danger Mouse had done long before that, so I am sure I am pretty biased.

As for Norah Jones, I think you are right: Long Way Home had to have been the song, and it is on her second album, now that I have had time to look it up. The melody and words are definitely the same, but I swear no song ever sounds the same as Tom Waits singing, no matter how similar the original and the cover.

I don't think you can claim that none of the many Dylan covers are any good. Out of the famous ones I think most are reasonable and the following are pretty much as good or even better:

The Byrds - Mr Tambourine Man (not quite as good as Dylan's version, but not bad, too polished pop psychedelia for me, but Dylan's is a little too hollow).

Johnny Cash - It Ain't Me Babe (as good as Dylan, a different sound I prefer Cash's voice but I don't like the arrangement as much)

Hendrix - All Along The Watchtower (far better than Dylan, outstrips the Dylan track in every possible way)

Joan Baez - Blowing In The Wind (as good as Dylan, much better voice)
