Covers that are arguably better than the originals:

'Better' is a bit rubbery, e.g. is a Toyota Camry 'better' than a Rolls Royce - it's reportedly more reliable and will last longer. Is fillet steak 'better' than chuck - not if you want to make a casserole.

With covers, 'better' to me means a version which adds something special, in some cases, the person/people who do the cover almost make it their own. Think The Beatles' Twist and Shout, Hendrix' All Along the Watchtower, Rod Stewart's Mandolin Wind or Cream's Crossroads.
