It will depend on a circuit. Typically 1000-4000uF should be placed before regulator and at least 47uF after. I used 10uF as it worked best with the battery connected to the output.

In my CD player, I use 2200uF before and 1000uF after LM7808 regulator, as those values worked the best.
 
Yes, the large resistors are only used for power amp aplication and not needed with regulators.

Any standard trimmer will fit here, you just need to form the pins properly (center and one of the outer pins connected together). After setting required voltage a trimmer should be replaced with fixed resistor.
