Your reason for dishing does seem to make sense, in that the LP is liking to be more constrained, thus improving flatness.
I'm stunned by the sound coming from the 707. It is night and day compared to the Dual. The Charles Lloyd in the Soviet Union LP sounds great. And I expect better sound when it is playing through the Audible Illusions M3A. And a AT VM540ML is on order.
One thing I did that I believe improved the sound of my system is I made interconnects using Ohno cast silver wire. PTFE tubing, Eichman Bullets, and silver solder. They are very short, just long enough to reach the components. Most are 9" to 12" long.

So, I thought it was time to clean and lubed it. I took the turn table out of the plinth and turned it over to get ready. It looked like it was recently lubed. There was no dried, dirty grease anywhere. All the parts that call for grease in the service manual had soft, clean, pliable, gold colored grease and all parts moved freely. The other parts that call for oil turned easily. So, I'm just going to put a renotac alternativ, on the vertical spindle bearing and the speed control vertical bearing.I have a 1249 that I bought new in 1975 and it is in excellent condition. My system is an Audible Illusions M3A, Aragon 8008bb amp, B&W N803 speakers and XLO interconnects and cables. I would think my LPs would sound better with better spec.d TT.
