Unless Everest popped up after the flood, it was, by definition, inundated by it, ie 5-mile deep water covering the planet.
The "the lack of context shown by critics of ancient writings" is an acceptable complaint, but again, religious types live their lives by such ancient writings and interpret them to their own ends. I have read the verse and decided that it means that the flood covered all the mountains on earth. You have interpreted it differently to fit your narrative. One would have thought that if these writings were indeed the words of gods that they would be a little less ambiguous...
If the waters rose to an altitude of 1,000' or 10,000' or 30,000' that would lift the base of the atmosphere to that same altitude, at which normal atmospheric pressure should be found.
