I think that one was 12 years aged. I try to seal it after drawing as much air out as possible, and put it in the controlled drawer at the bottom. Granted that piece had to be going on several months since I first opened it. It has to be near or past five months by now.Cool and dry place for sure. As you said the Parmigiano is an aged cheese and this makes simpler to store it, but if course you can't overcome a certain period, mainly if you opened the wheel.

We buy a whole wheel of Parmesan and cut it up, vacuum seal the portions and freeze them. I notice no major (some) degradation over 6-8 months.

Actually, I like pizza with pineapple, canadian bacon, onions, green peppers, pitted black olives and cheese.

Pine bacon is classic. I usually get mushrooms Canadian bacon pepperoni minced garlic and sliced tomato. Or veggie or feta and spinach.

A guy tried one to say here pine apple was a classic for pizzas and peperoni was invented in Italy... he mysteriously disseapered.

I'd try this one too, but with tomato and jamon Serrano instead of eggs...I also make breakfast burritos with pesto, mozzarella, eggs.
