Could I use to switch AC on/off a switch rated 220AC 3A?

That transformer should be good for 1.6A on each secondary and I would fuse them accordingly.

yeah it should be fine, the primary should be pulling just a fraction over that at full tilt, I'd rather be a little on the safe side as the fuse can last several seconds to minutes at its rated current.

Input power rating full load is aprox 33VA.

Normal nuisance resistant direct on line starting fuse rating is 3*33Vac/220Vac ~ T500mA

not that in this case matters, but its' divided by 230 in Spain 🙂

The mains voltage varies from 100Vac+-tolerance to 240Vac+-tolerance around the world.

true, but as I said,nominal European voltage is 230V +- 10% (even though UK uses +10% -6%....so average close to ~240, right Andrew?)...
