The 15LB100-8W is a good value speaker, but not much displacement for a "subwoofer".

The lower power 15LB075-UW4 worked well in the SS15 tapped horn, nearly the output of a pair used in bass reflex cabinets.

It is hard to beat these drivers for the value, most manufacturer calculate xmax by:
VoiceCoil-MagnetGap/3*2
22-11/3*2 = 7.33mm

That said, 15" had unbeatable value only a couple of years ago, but 12" and 18" are much better value now.
Double 12" using the box 12-280/8A are less than a single 15LB100-8W, and you will get slightly more displacement.
Using single 18" my personal opinion is that you get the most value from SB Audience BIANCO-18SW450 if you can make a large enclosure.

If you want a "compact" 18" and have a little bit more money the new NERO-18SW1900D is very impressive for the price.

A dynamic mic works fine, it is not quite as good as a condenser microphone which is again not as good as a calibrated measurement microphone.
The important thing is to have a microphone that can help you verify that you made a proper crossover.

What kind of price are you thinking about for amplifier, horn and tweeter?

How are you going to manage the crossovers? I really would recommend some form of DSP, the best value per money solution may be the small 4x4 from Thomann.

Given your level of understanding, use-case and budget, I would recommend the Fane 12-250 in a closed box. https://www.thomannmusic.com/fane_sovereign_12_250_tc.htm

This combined with your 2 channel amplifier would enable you to make a mono setup where you put the closed box Fane 12" on top of the subwoofer.
All the crossovers and freqency adjustment would be done with the DSP unit, use a microphone to verify that the frequency response is good with the help of REW:

If you stack the top on the sub you may get a good enough height for listening, should be possible to have this compact setup on some wheels so you can pull it around and hook it up to power wherever you want to play.
You could set the crossover around 200Hz if you make a vented design for bass, for TH or other solutions you may need to adjust the crossovers according to the limitations of the design.
The DSP can handle another amp+sub+top combo if you want to scale it up.
