So I think it creaked, squealed, rattled,... and clicked!
Notice I've said nothing about a load?😉
So sure, my circuit will create regulated +, 0, -
You just can't pull current from it. LOL

Meanwhile at the SMPS department
A new guy asks whether he can connect a load between +12V and +5V to run a fan with 7V
The senior screamed
And goes up to him, and whispered, "But I totally do it anyway"
Culture/design norms shape how we think.
The +48 and +24 will work from a single winding as long as the current out from the +24 doesn't go negative. With DC load we can make it happen. With audio equipment, not possible.
Stick to dual isolated secondaries or SMPS or etc.
