As long as the input choke is at least 10H - and rated for input duty - use what you have. The second choke can be 5H upwards, a de-luxe version could use a nickle or amorphous cored "broad-band" item for this (and BlackGate WKZ caps!).
The dominant ingredient in the sonics, however, is the cap used in the upper arm of the capacitative divider of my sempermusica diagram (Kim bay Smidt's diagram is for an earlier version).

For OPT I would now recommend 3k5 or 2k5 primary impedance for a sweeter sound.

1) How should I scale the power supply for supplying both channels? 280-0-280/200mA, 6,3V-0-6,3V/2A, 5V/6A ? or is this overkill?

2) With the first cap shared, should I change its capacitance?

3) Whats the function of the channel interconnection that appears between the chokes in the schematic?
 
The power tranny can be a 250-0-250 @ 100 mA(min), 6.3 @ 2A and 5V @ 2A. The 280V crept in as a result of an abandoned shunt-regulated version idea.

The first cap can be 47 - 100uF, shared or not.

The interconnection is for the second channel B+. I use 250VAC mains connectors with 3rd pin for chassis earthing.

I have been following this thread and I might also be interested if the project isn`t expensive. The sad thing is you don’t have the trafos and chokes any more. Are you aware of any sources (perhaps in Germany?) for about the same price and quality?

unfortunately I don't know any other source that offers the same quality at the price. Unfortunately Mladen Krklec is not licensed for export and is kept busy meeting local demand.
However there are several good winders in Germany (names escape me). The problem will always be that the best winders are the busiest. Perhaps ask at a German language forum for recommendations? (Of course 'Kuei Yang Wang' may respond helpfully if you post a new thread here with a title like "Recommended winders in Germany?" 😉 )

The Sowter SA02 is quite a good substitute though not as sophisticated in winding terms as the Krklec and they offer a good range of chokes. In Sweden there is of course Lundahl, I have used their excellent chokes but not their OPTs. In the Netherlands Tribute and AE (Automatic Electric). The Tribute amorphous core OPTs are among the very best in the world but are not inexpensive and there is a very long waiting list.
