I've used that Vifa in several projects, only one of which was my design - although I adapted that one from a commercial project. I've used it with the Dayton DC160, 830656, SDS160 and SB16pfc. Some of those were just test builds, but that tweeter always sounds nice and is well made.
I prefer the Vifa's sound to the Dayton DC28F, although it won't cross as low as the Dayton, but your workshop guests won't spend hours trying to pick bits of fluff and mosquitos out of the sticky dome. Seriously, it sounds OK but is poor value here compared to the SB and Vifa competition.
Having suggested SB tweeters, I haven't used them but rely on peoples' reports.

If you are not applying baffle effects to the plots you are using to model the xovers, then you are doing a disservice and limiting how full the bass can sound to your coworkers.
I think I should choose between one of these two setups

See what it takes to sim it at 86dB at 1k and above, and with a smooth transition below 1k to 200hz.. That would be closer to a real world filter. The woofer coil will be larger, and possibly more expensive. A couple more resistors will probably be needed.

Yes, designing two different speakers is twice the work for me and complicates the process of putting them together
It's just me having 30 employees in the shop putting speakers together. It's fun for them since they don't manufacture stuff everyday. These are all engineering nerds. They love this kind of stuff for the same reasons I do.
Then they get to keep it.
I think if I spent more money I would include a cheap mono amplifier. That is what I did last year. That Amp ate up a lot of my budget. This year I want to make something nicer so they cna buy their own amplifier and choose how good of quality it is. Everyone here gets paid quite well. They can all afford an amplifier.
I know this is an old post, but I'll add here that there is a subtle ring visible on this cone even in the product photography for both versions if you look for it. It must be an unavoidable effect of the manufacturing process, or possibly an intentional distortion to improve the cone behavior.
Late to the game, but for that kind of budget and application, you might consider a single driver fR. One better qualitly 4-5” driver instead of midBass + tweeter + crossover.
That said, the SF W14 really kicks above its cost. We use a pair in Tysen V2 (ML-TL), i still have a few kicking about. We also did a 10 litre miniOnken with 2 W14, so decent performance can be had from a very small box.
I aslo strongly suggest using quality plywood — MDF’s only asset isit is cheap.

This would be by far the easiest thing to run, however, that makes the assembly just too easy and then it isn't really an event that involves electronics. Then its just sticking a driver into a box. I have also considered a coaxial but that just doesn't have the same impact on a regular person as a traditional two way.
