The CMF55 Dale resistor is a good product. Its rated at 0.5W. I would recommend it on quality grounds for VR1.
Could be a candidate for R1 too. But for no more than 350mA setting. So it would not dissipate >0.2W. Long term reliability is what we also care about. Keep it 2mm proud off board for air to can circulate around it if for R1 use.

To find the value of the resistor that replaces VR1 i have to place the multimeter probes on VRR or VR1,according to the manual it would be on VRR,in doubt....?

Would it be possible to run two positive and two negative boards off of a single double tapped transformer?

After using my negative regulator, in my preamplifier and with an excellent performance, I want to implement it symmetrically in my headphone amplifier, the only drawback is that it has to be in a separate chassis for lack of space, and the worst at a distance of about 3 meters.
Would it have problems of instability of operation for being so far away from the amplifier?

No it will not have stability problems with very long umbilical.
But that cable's own resistance will worsen the output impedance spec.
