Thanks. So I should order 2 matched pairs of IRFP240 mosfet from h_a.

Could someone tell me why JFETS are being advertised in the diyaudio store as being a perfect match for a stereo F6 build? Can these be used instead of the MOSFETS? Is there a different sonic signature? Are the input and output transistors different? Cannot find information on this.

As explained by Meth Master they are input devices make sure you get them.
You will also need psu pcb and rectifiers for powersupply also available in diyaudio store.
Antek make good transformers but you might find something local

Now contemplating the best fit for purpose combination / brands of resistors to use

Sure, if you observe good practices.

Yes you can. I built an F5 point to point. It performed very well

yes Did something like this with my first F5 and aleph j

It is really time consuming. (But make a layout, etching, Drilling too)
But i think this boards are solid as a rock and they will not break.
Resistance in the wire is also no Problem. Power wires are 1mm and the others 0.7mm solid core Copper.

But there is also an other opportunity make your pcb.
With turret boards like old Tube / Fender amps.
This i will try next time i build a amp with so few parts.😀
