I am building a three channel guitar amp, and am having trouble selecting
a good signal relay. I will be using three SPST (preferable 5v)
and two DPDT (16v) relays.

Sounds like you want relays that are powered/switched by 5 volts. We need to know how much voltage and current you are going to switch. For a good overview of relay types check out this page. http://www.surplussales.com/Relays/sealed_pc.html

At work we mostly use Axicom, Omron and Zettler (and some others). Only Omron has given us some quality issues over the years (actually enough for a customer to do a redesign).
For your application I'd recommend you check out the Axicom V23105 series, but any good quality relay should be suitable.

On another subject, I need to find a toggle switch that won't pop when switching. I wire a mid pot bypass that works well except for the pop.

the pop when switching is probably not the switches fault. you might find that there is some DC coming in somewhere and the change in DC level is what's causing the pop. could be other causes too, hard to say without details of your circuit. can you put a scope on it?
