Would love some help: DJ fold-back - trapezoidal, stereo, single cabinet.

I guess I fail to see how any artist or, to quote - 'real DJ' - is supposed to interact with sound without a proper image of it.
If you are referring to a stereo image then I fear you are more of a studio DJ than a live performance DJ where stereo is rarely used. In bigger rooms with large PA systems and sometimes multiple speaker positions creating a stereo image isn't possible so these systems are run in mono.

I think you will find most DJ's do this .
Nope. All the DJs I work with use a single monitor and 1/2 a headphone, I have always been curious why they don't just use the headphones with 1 track in each side like I used to do but who knows... maybe it's just what they got used to.

And since I am the main DJ on the rig, it follows.
Well that is the most important factor, the system has to please the user.

When I was running vinyl I had left channel in left headphone and right channel in right headphone. Worked a treat.
A set of head phones is cheaper than a monitor.
It also doesn't muddy the sound the audience are listening to.

Even that old AC adapter powered Radio Shack dj mixer that came out in the 70's had the channel being cued in one earphone, and the mix in the other. One time my mentor got a gig where they provided a "fancy" system - but the big *** mixing board didn't even have monitoring capability. "I can't work with this s***", he said, and went to his car and got the rat shack mixer to do the show. I had a couple mixers over the years that didn't have split cue and I hated them. Even went so far as to modify an expensive Numark to work just like the old RS.

If you use one earphone you pretty much need a monitor - because the sound out of FOH is delayed and that will really screw up a beat mix. Maybe not so much now with all the media digital and time coded, but it still helps to hear it.

This is kind of my entire point (on top of the 'mudiness'). 'The way I prefer to DJ', is to be listening to the cued track in either ear, while using my exposed ear to listen for the beat/melody. In this situation, you really do need a monitor for the above-mentioned reasons.

However, the 'stereo-vs-mono' point definitely still stands. TBH I guess I can't really recall doing much channel panning etc - it is always things like how the snare of one track, interacts rhythmically with say the vocals, synth, bassline etc. of the other, creating something 'new'. But I still thing a 'foldback' is essential, even if just a single mono 6" driver........

Last thing, though this should be over in subs - what about a re-design and build sub 2x12", appropriately powered at 2x2 Ohm by this 2 Ohm stereo Lanzar ev294:

Lanzar - EV294 - 3,200 Watt 2 Channel SMD Class AB Power Amplifier

Money sucks.

... Or you could get a Behringer NU3000DSP. 300/600/1000w/ch into 8/4/2ohm, built-in DSP, about half the price of the amp you listed, and it doesn't need a 12v power supply.

I think you need to weigh up how much improvement you'll get by using two subs instead of one, vs the extra work of building, powering and then carrying the thing.

If you come up with a budget, I expect we could probably recommend a decent PA sub design.

With regards to the monitors, I'd seriously put the drivers in a small ported box each and call it good. Stereo isn't essential, but if you've got the drivers and amplifier to do it, you might as well. Cueing the next track happens on the headphones, but some monitors to ensure the DJ can hear what's happening out front is an excellent idea IMO.
