(or am I missing something?).
I too have always done it the hard way. I cannot wrap my head around deliberately missing a chance at getting the word by ignoring known letters in the solution for the chance of gaining other letters. That said, I know it's a numbers game, I am a math kind of guy. It still does not compute. Twenty times now I have got it on the 2nd try. Something that doesn't happen doing it the blanket way.

I understand the two camps. I have tried both ways. I chose one of them as it seems more Spock like. I actually use a bit of a hybrid. I do not disregard the known letter and always, always try and incorporate the remaining vowels in the second word, when it makes sense to do so.

When you get right down to it, either way seems to work as sometimes I am ahead of the rest and sometimes not so much. πŸ™‚
