The 1000M's are 8 ohm, 90db sensitivity, and are said to have a benign impedance curve. The sound is very transparent. I really like these speakers and I plan on keeping these for the long haul.
Preamp is a Benchmark DAC2 HGC.
Room is 13' x 14'.
I listen at less than 75 average db at my seat.
I listen to a variety of genres - mostly dreampop/shoegaze, but also jazz, blues, folk, classic rock, alternative rock.
Should I go with the M2X, F5, F6, or Aleph J? Or something else?

I have particular soft spots for the M2 and AJ. Since you're already leaning towards the M2(x) you can just start with that. There's also the bonus fun of the various front end cards you can try.
Of course, you may still end up building an AJ down the road.... 🙂

Analytical, clear speakers, not so rich bass, can sometimes sound edgy and harch, 8ohm. (My very short Google research🙂)

To be perfectly honest. In my parts of our beautiful, infinite universe: that is a perfect description of a pair of really, really, really, bad speakers that sucks a gigantic elephants entire *ss. Twice.

Thanks guys for the recommendations. I had already ordered the M2X boards after Zen Mod's recommendation. Maybe I'll do another build after the M2X.

Used the same chassis and power supply for both amps. Just swapped the boards out.
First build was the M2X. Built and listened to all of the daughter boards from the diy store. My favorite is the Mountain View board, and this is the one that I kept in the amp the longest.
Then a few weeks ago I finished the Aleph J build.
DAC / preamp is a Benchmark DAC2 HGC. Speakers are Yamaha NS-1000.
Someone will ask me which amp I like the best, so I'll just tell now - it's the M2X with the Mountain View daughter cards. If fact, this is the best sounding amp that I have ever heard. The Aleph J is also near the top. My preference just leans to the M2X.
Of course, since I'm using the same chassis for both amps, I'm going by memory, not a/b testing. Without a doubt though, the M2X with the Mountain View offers better bass. Lots of tight, articulate control. From memory, the M2X / Mtn View is also more transparent, layered, and holographic, with a blacker background. This is just my preference. The Aleph J is more harmonically rich.
I'm already thinking about which First Watt I will build next 😀. I'm truly addicted.

Very much. These are the most lively and engaging amps that I have ever heard. Totally worth it.
Might want to measure/calculate the voltage needed to drive your speakers to your favorite listening levels. I've got some 90dB efficient speakers and found running an F4 clone off the SE outputs of a Benchmark DAC3 to need a little bit more. Solved the problem by building a pair of F4s and running them as balanced monoblocks off of the balanced outputs. More than enough drive for me.

Yes - this is good idea - keep the chassis and power supply , and then swap the actual amps .
Just to add temptation ........ Troels has reworked the crossovers for the NS - 1000 's .
For many of his designs , Troels has stopped publishing values on his schematics , because people were copying his designs
and selling them for retail . So regardless of whether you intend to rework the crossover ,
recommend getting a printout of this just in case the values are removed .
