Which of these tubes is considered the better of the two:
1. Mullard-sheild logo-long plate-square getter
2. Mullard-Bugle boy logo-short plate-round getter
What would be best for guitar use(sorry hi-fi guys)?
I have some of both. I am loading my entire amp with Mullards, including the rectifier.

Try both (one kind then the other) in your amp and let your ears decide. It may be a choice as to which one is less microphonic IME with Mullards.
I agree with rcavictim. It's your stereo, your ears, your choice (what we may like, may not be what you like). IMO, "what tube sound is best" is sorta like "what is the best color?"....totally up to you 😉
I have listened to a myriad of 12AX7's and the one I like best is the 6N2P 😀
For guitar, try a 12AU7, 12AT7 and 12AX7. I know a few guys that got the most satisfaction from an 'AT7 🙂
