Sorry, your initial questions about stereo sent me off down the wrong path - I assumed you were a complete newbie who wanted to make a trendy piece of audio furniture.

I agree that Morgan Jones book and the valve wizard website are good places to start. You have two options: learn a lot and design something yourself, or find an existing design or kit. Don't assume that because a design is popular that it is necessarily good.
 
The purpose of the amp should be to play music and to have stereo sound (not mono). Now then iam going to start with building a pre amp iam going to build it for a turntable. Does that sound like a better plan? like this design http://phonoclone.com/images/p6dj8_cir.gif ? or do you know any better schematic for a pre amp stereo amplifier for turntables?

Play music into what kind of speakers (efficiency) and up to what kind of maximum (peak) level ?

And no, I'm afraid building a decent amplifier is relatively simple compared to building a decent phono preamplifier as much more care must be taken not to introduce noise with phono stuff; power amplifiers are more forgiving in this regard.
