Silver-mica caps are stable, good to very high frequencies, have very low dissipation factor, but a bit higher dielectric absorption than one would expect from their otherwise excellent specs. They can be had in values up to about 10,000 pF, albeit in a rather large package size, and with high cost.
Ceramic caps come in a handful of popular types, with specs ranging from terrible to wonderful. A C0G, aka NP0 cap, will better a silver-mica in all regards. They approach a perfect cap, but are only available in small values. Other ceramic types (Z5U, Y5F and such) will have worsening specs, but more capacitance in a given package size. IMO, they're only good for bypass use.
