...This being said, where should I look (other than in my wallet) to find a difference to a, say, 10k audiophile CD transport like the Wadia 27?

Audiophile music players and DACs are not all the same.
Some of them have technical performance that is worse than far less costly gear, and others perform well enough.
An "Audiophile CD Player" simply "is". It has nothing to do with price, nothing to do with advertising copy, nothing to do with the distribution chain (direct, DIY, brick-and-mortar reseller, surplus, etc).
Do not mistake what is, with what you are being sold as.
Do not confuse price with value.
If you are an Audiophile ... again, don't be confused, it is simply someone who enjoys music with the best reproducing equipment he is willing to budget for and which offers the performance he finds acceptable ... then by definition the "Audiophile CD Player" is the one you use, or perhaps more precisely, the one you enjoy using.
It is the old joke, where the Punch Lines starts:

Be suspicious of any advertising copy that uses the word "Audiophile". It's as if you were a woman and your are being sold on a product that makes you feminine. Such a thing does not exist, so don't buy it.
Or, it is like your Nickname. Your Nickname is bestowed upon you; you do not create it. And the same with an "Audiophile-Grade" product. It is the Audiophile ... re-read the definition above before you finish reading this sentence ... who bestows the title on the product; the product does not bestow it upon itself. Such a thing is impossible, a fraud. Do not buy it.
Or, finally, maybe an "Audiophile Grade" product is like "Aircraft Grade Aluminum", a complete and total fabrication, a lie. Such a grade does not exist (and I am dismayed to see Ford using the term "Military Grade Aluminum" in their F-150 advertising. Really, Ford? I mean, Really?).
If it did exist, what is typically claimed to be "Aircraft Grade Aluminum" is something made from 6061. Yet 6061 is the least likely grade of Aluminum to be used on an airplane; and the least likely grade to be used in anything actually important to the operation and safety of the craft; it is only used if weldability is absolutely necessary. 7075 is the grade of aluminum most often employed.
Or, put another way, the aircraft's Beverage Cart probably uses 6061, the structural or engine components probably use 7075.
Everything ... and I mean everything ... in my main and other audio systems, plus the one I built for my favourite vehicle ... are "Audiophile" components comprising an "Audiophile" sound system. Because I enjoy using them to listen to music and I am satisfied with the performance. It's quite simple, really.
