Impedance matching

no, sorry, but you have it back-to-front.
When two tubes are removed from an AC30 transformer, the Impedance of the speakers has to be doubled, and not halved as you are suggesting.
AC30 OP transformer has 8 ohm and 16 ohm taps from its Secondary winding to allow the choice of either an 8 ohm load or a 16 ohm load,
WHEN it is a FULL 4 x EL84 amplifier.
When it is used as a 2 x EL84 amplifier, these output taps become 16 ohm and 32 ohm.
With 2 x EL84 tubes you can use one 16 ohm speaker connected to the 8 ohm tap,
OR, two 8 ohm speakers connected in Series for 8 + 8 = 16 ohms connected to the 8 ohm tap.
Also you can use two 16 ohm speakers connected in Series for 16 + 16 = 32 ohms connected to the 16 ohm tap.
What brands and model-number speakers do you own, or plan to buy ?
