One of my favorite tracks is from Better Than Ezra's Deluxe Album from 1995.
Track 12 - This Time of Year, is 4 min with the first min just soulful vocals and acoustic guitar until the bass guitar and drums kick in with incredible power and detail.
Everyone I have played it for is simply blown away because they have no idea what's coming.
This entire alternative rock album is very good with great bass lines throughout.
Worth a listen if you're not familiar.

Bob Marley - Natural Mystic, from the album "Exodus", track 01.
Over the the baseline, there are some arhythmic drumming inside, that makes me jump on the chair. Literally.
