Which hook-up wires do we want to twist, and which ones
should we not twist, inside our projects ?

Twist all pairs. AC and DC. Keep wiring as short as possible. Parallel wires couple (=induce noise) more easily so try to have perpendicular intersections. Sometimes a straight short wire is better than a twisted pair (like in the PSU from rect. bridge to large capacitor bank or from one cap to another). Avoid loops.
