are you saying that using the same triac, the snubbered arrangement gives no glitch and the snubberless gives a glitch?

Yes, the snubberless version is not rated to fire correctly in quadrant IV. As to adding a snubber network, well that is normally needed to stop false triggering of the triac on inductive loads such as motors (when you are controlling the phase angle to alter voltage). My experience with transformers was that it wasn't really needed as we are either turning them (the transformer) fully on or off.
