I’m about to recap my Yamaha CA-2010 and I intend to replace the thermal paste but I’m unable to find replacement gaskets, are they called something else ?

Those are mica insulators
You can still get the TO-3 mica mica, but I normally use thermal pads, which don't need the paste

Paste dries out, but that is by design and doesn't need replacing ever. You have found out that mica is fragile.
The important thing is that the heatsink surface should be flat and free from burrs.
There should be some tiny plastic bushes (not shown in your photos) to prevent the fixing bolts from shorting the transistor flange to the heatsink.
Do NOT over-tighten.

There were not any of the little plastic bushes on these so I suspect that the things on the underside do the same job ….

Berquist (and others) available from Digikey (and others) manufacture silicone sheeting aka "Sil-Pad". It comes in sheets or pre-cut. E
