I will be building a pre amp soon using the Maya R2R volume control and input selector, with the Maya, the transformer (powering the maya) is powered all of the time. Is this alright long term?
Yep. As long as the transformer is sized for the current draw of the load you can keep the power on 24/7.

I would use a switch, as in my experience a sudden voltage spike can harm equipment.
If you must, add a MOV or transient voltage suppressor, or any device intended to protect the unit from high and low voltages.
Low voltage can occur if one phase on the HT side of a distribution transformer fails (blown fuse), and that also is not desirable.
