I was wondering what people think of integrating a touchscreen lcd as the "remote" for my system.

this is the kind of technology I am thinking about using. I figure I would link it to the vga out on my pc, and use the dvi out for the panel. That way I could be mostly mouse and keyboard free!

I've seen a couple of companies do this, most recently from Harman. It seems to me that a clever dude could program a PDA with an IR output to simulate a remote.
No, not a remote, a remote display(think giant remote that plays video) that alows you to control your projector and pc via finger control.

It's definetly possible. I'm in high school, we have an ATM Lab(it's a video conferencing thing, some classes are taught from other schools) and a flatscreen LCD Panel with touchscreen is used to control the cameras. This room also has a high-end video projector and an amazing dolby 5.1 System(the room is smaller so the effect is much better than you get at a movie theater), one of the things that inspired me to figure out LCD projectors...
The tablet pc is too expensive. the lcd needs to have a touch adapter to make a keyboard and mouse unnecessary(via on screen keyboard)
I think you're going to end up paying quite a bit for an LCD Touchscreen anyways. Good touchscreen=$$$

A PDA with Wireless Network card back to a "Home Control Web Server" would be the cheaper way I think, if all you want is limited feedback into on the display...
