So what would I want to use to "turn down" the amp power? I have way too much available power for the application that I'm starting with. (although it will be excellent for future projects)

I don't have experience with your particular amplifiers but with the minidsp you can control the gains on both inputs and outputs, lowering those into a sweet spot should keep your speakers from being over driven. It's what works for me. Good luck!
That might be it. The board has 3-pin connector for a mono potentiometer to do the job. The pot could be installed behind the amplifier or some other secure location.
I've seen many amps using that grey CD-ROM analog type cable for signal.

If he means IDE/ATA cable, I would use it only for input wires. For outputs something thicker.
Would that affect sound in any way? Introduce any kind of unwanted noise or interference?
Don't have the answer yet, my project is unfinished because of broken solder iron 🙁
But I think the potentiometer isn't directly connected to any of the inputs or outputs, so it probably is noise-free.
I'd be getting the board to go inside the box, not a prepackaged module. Also, this will now be an 8-channel amp.
We're building a custom enclosure.
Would love to see how this build went. I just got a MiniDSP 2x8 and was considering something very similar.
