That is a real dilemma.
Did you ever record anything yourself?

Yes - if you go to the end of the mic test you'll hear a recording of violin and piano done with three of the microphones tested.

I think positioning mic's can also make a huge difference. One mic is better for close miking and other not. Also depending of their pattern (8 versus cardioid should not be compared as better or worse or at all, just make a choice depending of the situation at hand).
