I've played with those EPC GaN FETs before. I was doing research on them at my university for use as drivers for streak cameras. Our main attraction was the radiation hardness of GaN devices. Unfortunately the quality control for EPC GaN FETs were pretty bad. Only about half of our devices worked and we assembled our boards with microscopes and nice hot air soldering stations.
Regarding modeling of these devices, one of my tasks was to come up with a better model for them. Eventually I gave up and decided that it was better to just empirically design circuits with them on the bench rather than trying to make a very accurate spice model.

Nice module - 12,288 taps is deliciously overkill. Here's hoping you don't build one with a big Virtex, the group delay would probably give you time to make dinner 😉
I've seen plenty of manufacturers in the recording/broadcast fields use their own DSP/FPGA instead of using an off-the-shelf device. Sometimes it's pride, usually it's because off-the-shelf offerings have some limitation in the application and the DSP/FPGA approach works better.
The guy who designed the JK Acoustics module is actually an audiophile colleague of mine who sometimes gives his hobby designs to JK Acoustics in exchange for some piece of audiophile equipment. The main reason why he designed his own digital filter is that he didn't like the undithered roundings of intermediate results in the standard off-the-shelf FIR filters. His filter only rounds the final result and does so with proper triangular PDF dither. I've heard his set-up one afternoon and I was impressed (under totally uncontrolled and unscientific conditions, of course).

To be as "digital" as possible, the amplfier should be open loop. If it's closed loop, there will be an analog feedback.
