I need to amplify a line-level signal in a piece of surplus equipment to a speaker level (1W) output. I have one of the Rainbow Kit amp boards which uses a TDA7052A chip. The amp is designed for an ungrounded output. Can I connect the (-) output line to chassis ground (headphone jack)?

No, the TDA7052A has a bridged output. Both outputs are active and neither can be grounded.

What do you want? A mono signal to loud headphone level? You can get pretty loud in headphones by capacitor-coupling one output and ignoring the other, essentially using half the chip. It should be possible to be at least as loud as the average iPod etc.
