I would like to add "tape out"-like jacks on my diy Goldpoint passive pre for a powered sub. Is it simply a matter of connecting them in parallel with the input jacks? Would there be a problem with impedence?

I suspect you may have loading and/or noise problems.
You need to buffer that thing.
In keeping with your passive pre, a minimalist solution would be a JFET buffer.

Feeding the Sub from the inputs of the passive preamp? You'll have no Sub level control.
The Sub should probably be fed from the outputs of the passive preamp.
Get a pair of "Y" cables and see how they work for you. At that time, you can decide whether you need a buffer.
