Looking to replace the 6SN7 input and driver cathode resistors with tantalum. My schematic shows a 27K 2W cathode resistor on the driver. Having a hard time finding this value resistor (without paying >$12 a piece). Would it be possible to use a 1W instead? Is going to tantalum from carbon even worth it?

On a cathode resistor? No. Use a nice quiet 1% or better metal film. Noise level is way more important in a cathode resistor than sonics. Unless it's a cathode follower.
