I know this is an esoteric one but for the life of me I cannot get the table tag to work in ANY way. I have tried several different formats and NOTHING works.
Yes, it is broken and has been for years. Not likely to be fixed until we move to new forum software.

I think not, that the format is set by the vbulliten configuration.
The table tag doesn't exist in vBulletin, it's inserted by the Wiki software and last I recall asking the author if it can be removed from the main forums and he said no, but that was a long time ago.
So, currently there is no table functionality in the forum.
The good news is that XenForo 2.1 just announced they will have table support via BBcode as well as a WYSIWYG table tool in the editor itself, which is where we will be soon:
