I just built an amp with 27dB of gain and I'm building a preamp with 18dB of gain. So total system gain is 45dB.
Is this adequate or excessive gain for a 2V line level DAC source? I don't know what the input sensitivity is.
I don't have a feel for this since I'd been using an integrated amp forever.

I believe you don't even need the preamp for your DAC. 27dB amp is enough for most case.
Unless you are powering up a 1000sqft hall or theater, you just don't need that much gain.

I would agree. 45db is on the high side even by my standards. I run my power amp at 34db gain and the preamp stages run at around 3.5db gain.
No, if some of your sources are small digital devices you'll likely need all of that gain. Headphone outputs from mp3 players are rarely more than 0.7Vrms full scale, and that's assuming the track is loud in the first place.
You didn't say what the output power of your amp was - typically you want to quote the input sensitivity, not the gain, to figure out the input requirements, as this is indepedent of the power level of the system. Failing that what are the rail voltages?
