The stiffness issue aside, any thoughts about the uses of coax for normal (say 1m) interconnects with decent unbalanced RCA terminations?

If you mean 75 ohm cable vision coax then yes it’s fine. Many have done this before and many will after. If you buy a roll and do your own connectors, you really only need the one cable for both audio and video.
Have the best of both worlds... RG-174 is coax and flexible.
I use it internal to the preamp and power amp, but no reason you can't use it for a patch cable.

I have a couple of different types in my parts bin including:
JSC RG-6U (quad shield) and the Canare (LV-77S, 506) Blue Jeans uses. The Canare uses a single copper mesh for outer and solid copper strand for inner. The JSC uses a thicker (than Canare) inner sold core stand, and two layers of steel (??) mesh strands separated by two foil layers.
